Ingredients

  • 100 g Egg noodles, dry
  • 90 g Pork, ground, raw
  • 4 g Chilies, dried red
  • 15 g Vegetable oil
  • 12 g Tahini
  • 8 g Soy sauce

Method

  1. Warm the oil in a small pan with the crushed dried chilies over low heat for 3-4 minutes until fragrant and deep red, then set the chili oil aside.

  3. Stir the chopped pickled mustard greens and garlic into the pork for the last minute, then take the pan off the heat.
  4. In each serving bowl, whisk together the tahini, soy sauce, sugar, ground Sichuan-style pepper and the hot chicken stock until smooth.
  5. Boil the noodles in unsalted water according to the packet until just tender, then drain and add them straight to the bowl.
  6. Top with the pork and mustard greens, spoon the chili oil over the top, scatter with scallions and mix everything together at the table before eating.
