One serving has 238 kcal and 26 g protein, and at least a fifth of a woman's daily need of manganese (81%), calcium (71%), copper (57%), selenium (45%), phosphorus (39%) and thiamin (35%). Ready in 30 minutes.

- Preparation: 15 min
- Cooking: 15 min
- Makes: 1 serving (364 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: celery, pork, poultry, sesame, shellfish, soy
Ingredients
- 100 g Tofu, firm
- 30 g Ham, cooked
- 200 g Chicken broth
- 20 g Bamboo shoots, canned
- 10 g Shrimp, raw
- 0.5 g Salt
- 1 g White pepper
- 2 g Sesame oil
Method
- Cut the firm tofu into very thin matchsticks; this stands in for the pressed dried tofu (dougan) traditionally used, which is firmer and easier to julienne finely.
- Julienne the cooked ham and bamboo shoots into matchsticks the same size as the tofu.
- Bring the chicken broth to a simmer, add the finely chopped dried shrimp, and simmer for 5 minutes to infuse.
- Add the julienned tofu, ham and bamboo shoots, and simmer gently for 8-10 minutes so the tofu absorbs the broth's flavour.
- Season with the salt and white pepper, drizzle with the sesame oil, and serve hot.
