  • Makes: 1 serving (288 g)
  • Difficulty: Hard
  • Diets: Dairy-free, High protein
  • Contains: egg, gluten, pork, shellfish, soy

Ingredients

  • 100 g Eggs, whole, raw
  • 80 g Rice, glutinous
  • 50 g Pork, ground, raw
  • 5 g Mushrooms, shiitake, dried
  • 15 g Shrimp, raw
  • 10 g Soy sauce
  • 5 g Oyster sauce
  • 10 g Scallions, raw
  • 12 g Vegetable oil
  • 0.5 g Anise seed

Method

  1. Soak the glutinous rice for at least 1 hour, then steam until tender, about 25 minutes.
  2. Soak the dried shiitake mushroom in hot water until soft, then dice finely along with the dried shrimp.
  3. Fry the ground pork, mushroom and shrimp together for 4-5 minutes until the pork is browned, then season with half the soy sauce, the oyster sauce and the five-spice; stir this filling through the steamed sticky rice.
  4. Beat the eggs well. Heat the oil in a wide non-stick pan, pour in the egg, and swirl to coat the base in a thin, even layer; this makes the crepe-like wrapper, standing in for the tofu-skin sheet traditionally used.
  5. While the egg is still just set, spread the pork and rice mixture evenly over it in the pan, pressing down gently, and cook over low heat for 5-6 minutes until the base turns golden and crisp.
  6. Carefully flip the whole cake over, using a plate to help, and cook the other side for 4-5 minutes until crisp; cut into wedges, drizzle with the remaining soy sauce, scatter with scallion, and serve hot.
