Eight Treasure Rice (Babao Fan)
One serving has 563 kcal and 8 g protein, and at least a fifth of a woman's daily need of manganese (64%), copper (42%), selenium (22%) and zinc (21%). Ready in 60 minutes.

- Preparation: 30 min
- Cooking: 30 min
- Makes: 1 serving (146 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free
- Contains: nut, pork
Ingredients
- 70 g Rice, glutinous
- 30 g Red bean paste, sweetened
- 8 g Raisins
- 10 g Dates
- 8 g Walnuts
- 10 g Sugar
- 10 g Lard
Method
- Soak the glutinous rice for at least 1 hour, then steam until tender, about 25 minutes, and while still warm, mix in the sugar and lard.
- Lightly grease a small heatproof bowl and arrange the raisins, chopped dates and walnuts in a pattern on the bottom and up the sides.
- Carefully press half the rice over the fruit and nuts without disturbing the pattern, then add the red bean paste in the centre, and top with the remaining rice, pressing down firmly.
- Cover and steam for 30-40 minutes until piping hot throughout.
- Run a knife around the edge and invert onto a plate so the fruit-and-nut pattern is on top. This is 1 portion of a dessert normally made larger and shared; multiply the ingredients for a bigger mould.
