  • Makes: 1 serving (543 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein
  • Contains: celery, egg, fish, mustard, poultry

Ingredients

  • 180 g Carp, raw
  • 50 g Mustard greens, pickled
  • 5 g Chilies, dried red
  • 10 g Garlic, raw
  • 8 g Ginger, fresh
  • 15 g Egg whites, raw
  • 8 g Cornstarch
  • 1 g White pepper
  • 15 g Vegetable oil
  • 250 g Chicken broth
  • 1 g Black pepper

Method

  1. Slice the fish fillet thinly and mix with the egg white, half the cornstarch and a pinch of the white pepper; let it sit for 10 minutes to velvet the fish.
  2. Heat half the oil in a pot, fry the garlic, ginger and dried chilies for 1 minute until fragrant, then add the pickled mustard greens and stir-fry for 2-3 minutes.
  3. Pour in the broth, bring to a simmer, and cook for 8-10 minutes to let the sour, savoury flavour develop.
  4. Slide in the velveted fish slices one at a time so they don't stick together, and poach gently for 2-3 minutes until just cooked through and opaque.
  5. Stir the remaining cornstarch with a little water and stir into the pot to lightly thicken, then season with the remaining white pepper and the black pepper.
  6. Heat the remaining oil until hot and pour it over the top just before serving for a sizzling finish.
