  • Cooking: 15 min
  • Makes: 1 serving (160 g)
  • Difficulty: Medium
  • Diets: Pescatarian, Dairy-free
  • Contains: gluten, peanut, shellfish, soy

Ingredients

  • 30 g Rice flour
  • 10 g Tapioca pearls, dry
  • 50 g Water
  • 8 g Vegetable oil
  • 15 g Peanuts, roasted
  • 10 g Chives, fresh
  • 9 g Shrimp, raw
  • 20 g Daikon radish, raw
  • 3 g Mushrooms, shiitake, dried
  • 5 g Soy sauce

Method

  1. Whisk the rice flour and tapioca starch with the water and a little of the oil, then cook in a small saucepan over low heat, stirring, for 2-3 minutes until it forms a soft, slightly translucent dough; knead briefly once cool enough to handle.
  2. Soak the dried shiitake mushroom until soft, then finely dice along with the daikon radish, which stands in for the dried salted preserved radish (chai poh) traditionally used.
  3. Crush the roasted peanuts coarsely and mix with the chopped chives, shrimp, mushroom, daikon and soy sauce to make the filling.
  4. Pinch off small pieces of the dough, flatten into thin discs, and fold around a spoonful of filling, pleating the edge to seal into a half-moon dumpling.
  5. Brush the dumplings with the remaining oil and steam over boiling water for 8-10 minutes until translucent, then serve hot.
