  • Cooking: 5 min
  • Makes: 1 serving (225 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 180 g Milk, whole
  • 25 g Ginger, fresh
  • 20 g Sugar

Method

  1. Grate the ginger finely and squeeze through a cloth or sieve to extract about a tablespoon of fresh ginger juice; pour it into a serving bowl.
  2. Heat the milk with the sugar until it just reaches a gentle boil, then remove from the heat and let it cool for about 30 seconds to just below boiling.
  3. Pour the hot milk into the bowl with the ginger juice from a height in one steady pour, without stirring.
  4. Let it sit undisturbed for 5-10 minutes; the ginger's enzymes will set the milk into a soft, silky curd.
  5. Serve warm, straight from the bowl.
