Ingredients

  • 2 g Agar, dried
  • 200 g Black tea, brewed
  • 20 g Sugar

Method

  1. Grass jelly is traditionally set from a boiled herbal plant that isn't available here, so this version uses a dark, agar-set tea jelly with a similar wobbly texture and bittersweet edge.
  2. Sprinkle the agar over the brewed black tea in a saucepan, let it sit for a minute, then bring to a boil, stirring, until fully dissolved, about 3-4 minutes.
  3. Stir in half the sugar until dissolved, then pour into a shallow dish and refrigerate for at least 1 hour until set.
  4. Dissolve the remaining sugar in a splash of hot water to make a simple syrup, then chill.
  5. Cut the set jelly into small cubes, spoon into a glass with the syrup and plenty of ice, and serve cold.
