  • Cooking: 15 min
  • Makes: 1 serving (214 g)
  • Difficulty: Hard
  • Diets: Pescatarian, Gluten-free, Dairy-free
  • Contains: sesame, shellfish

Ingredients

  • 25 g Tapioca pearls, dry
  • 18 g Cornstarch
  • 60 g Water
  • 5 g Vegetable oil
  • 80 g Shrimp, raw
  • 15 g Bamboo shoots, canned
  • 3 g Sesame oil
  • 5 g Chives, fresh
  • 1 g Salt
  • 1 g Sugar
  • 0.5 g White pepper

Method

  1. Mix the tapioca starch and half the cornstarch with the boiling water and the oil, stirring quickly, then knead into a smooth, slightly translucent dough once cool enough to handle; wheat starch is traditional here, but this tapioca-cornstarch dough gives a similarly chewy, translucent skin.
  2. Chop the shrimp coarsely, leaving some texture, and mix with the diced bamboo shoots, the remaining cornstarch, sesame oil, chives, salt, sugar and white pepper.
  3. Divide the dough into small balls and roll or press each into a thin round wrapper.
  4. Place a spoonful of the shrimp filling in the centre of each wrapper, fold over, and pleat the edge to seal into a crescent shape.
  5. Steam the dumplings over boiling water for 6-8 minutes until the skin turns translucent and the filling is cooked through.
  6. Serve hot, straight from the steamer. This is about 4 dumplings (1 portion); multiply the ingredients for more.
