  • Preparation: 90 min
  • Cooking: 15 min
  • Makes: 1 serving (75.5 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten, sesame

Ingredients

  • 40 g Flour, all-purpose
  • 1 g Yeast, active dry
  • 3 g Sugar
  • 20 g Water
  • 3 g Sesame oil
  • 8 g Scallions, raw
  • 0.5 g Salt

Method

  1. Dissolve the yeast and sugar in the water, let stand for 5 minutes until foamy, then mix into the flour to form a smooth dough; knead for 5 minutes and let rise in a warm place for about 1 hour until doubled.
  2. Roll the risen dough out into a thin rectangle, brush with the sesame oil, and sprinkle evenly with the chopped scallion and salt.
  3. Roll the rectangle up tightly into a log, then cut into short sections.
  4. Stack two cut sections on top of each other and press a chopstick down the centre lengthwise, then stretch and twist the ends in opposite directions to form the flower shape.
  5. Let the shaped rolls rest for 15 minutes, then steam over boiling water for 12-15 minutes until puffed and cooked through. This is 1 roll (1 portion); multiply the ingredients by 10 for a full batch.
