  • Cooking: 10 min
  • Makes: 1 serving (229 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Dairy-free
  • Contains: egg, gluten, sesame, soy

Ingredients

  • 45 g Flour, all-purpose
  • 75 g Water
  • 0.5 g Salt
  • 55 g Eggs, whole, raw
  • 15 g Wonton wrappers
  • 10 g Hoisin sauce
  • 5 g Sriracha
  • 8 g Scallions, raw
  • 3 g Cilantro, fresh
  • 2 g Sesame seeds
  • 10 g Vegetable oil

Method

  1. Whisk the flour, water and salt into a thin, pourable batter with no lumps.
  2. Fry the wonton wrapper in a teaspoon of the oil over medium heat for about a minute a side until it is crisp and golden, then set this cracker aside.
  3. Heat a large flat pan or griddle over medium heat and wipe it with a little oil, then pour on a ladle of batter and quickly spread it into a thin, even round.
  4. While the top is still wet, crack the egg over the crepe and spread it evenly across the surface with the back of a spoon; cook for 1-2 minutes until the egg is fully set, not runny.
  5. Flip the crepe, brush the egg side with the hoisin sauce and sriracha, then scatter over the scallions, cilantro and sesame seeds.
  6. Lay the crisp cracker in the middle, fold the two sides of the crepe over it, then fold again into a rectangular parcel and serve at once while it is still crisp.
