  • Preparation: 45 min
  • Cooking: 10 min
  • Makes: 1 serving (401 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: gluten, pork, sesame, soy, sulphite

Ingredients

  • 100 g Flour, all-purpose
  • 48 g Water
  • 1 g Salt
  • 100 g Pork, ground, raw
  • 100 g Napa cabbage, raw
  • 15 g Scallions, raw
  • 5 g Ginger, fresh
  • 13 g Soy sauce
  • 6 g Sesame oil
  • 1 g White pepper
  • 10 g Vinegar, balsamic
  • 2 g Chilies, dried red

Method

  1. Mix the flour with the water and salt into a firm dough; knead for 5 minutes until smooth, then cover and rest for at least 30 minutes.
  2. Finely chop the napa cabbage, salt it lightly, let sit for 10 minutes, then squeeze out as much liquid as possible.
  3. Mix the ground pork with the squeezed cabbage, scallion, ginger, half the soy sauce and half the sesame oil until well combined and slightly sticky.
  4. Roll the rested dough into a long log, cut into small pieces, and roll each into a thin round wrapper; place a spoonful of filling in the centre, fold over, and pleat the edge to seal.
  5. Boil the dumplings in plenty of water for 6-8 minutes, until they float and the filling is cooked through, adding a splash of cold water once or twice to keep the boil gentle.
  6. Mix the remaining soy sauce and sesame oil with the vinegar and dried chilies for a dipping sauce, and serve alongside the hot dumplings. Makes about 12 dumplings (one serving); the dough is easy to double if you want extra to freeze.
