Ingredients

  • 160 g Chicken thighs, boneless, skinless, raw
  • 5 g Cornstarch
  • 9 g Soy sauce
  • 6 g Vinegar, balsamic
  • 5 g Sugar
  • 4 g Chilies, dried red
  • 1 g Black pepper
  • 5 g Garlic, raw
  • 5 g Ginger, fresh
  • 15 g Scallions, raw
  • 20 g Peanuts, roasted

Method

  1. Cut the chicken into bite-sized cubes and toss with a teaspoon of the soy sauce and the cornstarch; leave for 10 minutes.
  2. Stir the remaining soy sauce with the vinegar and sugar in a small bowl to make the sauce.
  3. Heat the peanut oil in a wok over high heat, add the dried chilies and cracked black pepper, and stir for 20-30 seconds until they smell toasty but not burnt.
  4. Add the chicken and stir-fry for 3-4 minutes, until it is browned on the outside and cooked through with clear juices.
  5. Add the garlic and ginger and stir for 30 seconds, then pour in the sauce and toss until it thickens and coats the chicken, about a minute.
  6. Stir in the roasted peanuts and scallions, toss briefly to combine, and serve right away so the peanuts stay crunchy.
