  • Makes: 1 serving (740 g)
  • Difficulty: Hard
  • Diets: Dairy-free, High protein
  • Contains: beef, celery, gluten, soy

Ingredients

  • 120 g Beef chuck, raw
  • 250 g Beef broth
  • 40 g Daikon radish, raw
  • 100 g Flour, bread (strong)
  • 190 g Water
  • 0.5 g Salt
  • 5 g Garlic, raw
  • 10 g Scallions, raw
  • 5 g Cilantro, fresh
  • 3 g Chilies, dried red
  • 10 g Vegetable oil
  • 1 g Black pepper
  • 0.5 g Anise seed
  • 5 g Soy sauce

Method

  1. Simmer the beef chuck in the beef broth with most of the water, the star anise and a little of the salt for about 1.5 hours, until very tender, then lift out, slice, and skim any excess fat from the broth.
  2. Meanwhile, mix the flour with a little of the water and the remaining salt into a firm dough, knead well, rub with a little of the oil, and rest for at least 30 minutes.
  3. Stretch and pull the rested dough by hand into long thin noodles, or roll and cut it if pulling is tricky, then boil in a separate pot of water for 2-3 minutes until tender.
  4. Heat the remaining oil with the dried chilies briefly to make a chili oil.
  5. Add the daikon radish to the simmering beef broth for the last 10 minutes of cooking until tender, and stir in the soy sauce.
  6. Divide the noodles into bowls, ladle over the hot broth, radish and sliced beef, and top with the garlic, scallion, cilantro and a spoonful of the chili oil.
