  • Cooking: 15 min
  • Makes: 1 serving (260 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: alcohol, gluten, poultry, sesame, soy, sulphite

Ingredients

  • 150 g Chicken thighs, boneless, skinless, raw
  • 15 g Chilies, dried red
  • 3 g Black pepper
  • 10 g Garlic, raw
  • 8 g Ginger, fresh
  • 10 g Scallions, raw
  • 15 g Cornstarch
  • 6 g Soy sauce
  • 5 g Sugar
  • 10 g Wine, fortified, dry
  • 25 g Vegetable oil
  • 3 g Sesame seeds

Method

  1. Cut the chicken into bite-sized pieces and marinate with the soy sauce, wine and half the cornstarch for at least 15 minutes.
  2. Heat the oil in a wok to about 170°C (340°F) and fry the chicken in batches for 4-5 minutes until golden and cooked through; drain and set aside.
  3. Pour off all but a couple of tablespoons of the oil, then add the dried chilies, black pepper, garlic and ginger, and stir-fry over medium heat for 1-2 minutes until fragrant, taking care not to burn the chilies.
  4. Return the fried chicken to the wok along with the sugar, and toss vigorously for 2-3 minutes so every piece is coated in the chilies and aromatics.
  5. Scatter with the scallion and toasted sesame seeds, toss once more, and serve hot. The dried chilies are for fragrance and not necessarily meant to be eaten whole.
