  • Contains: alcohol, egg, shellfish, sulphite

Ingredients

  • 150 g Shrimp, raw
  • 80 g Green tea, brewed
  • 15 g Egg whites, raw
  • 8 g Cornstarch
  • 8 g Wine, fortified, dry
  • 1 g Salt
  • 10 g Vegetable oil
  • 3 g Ginger, fresh

Method

  1. Brew a cup of green tea and set it aside to steep; this dish uses both the brewed tea and a few of the steeped leaves for their delicate flavour.
  2. Peel and devein the shrimp, then mix with the egg white, cornstarch and half the salt; let marinate (velvet) for 15 minutes.
  3. Heat the oil gently in a wok, add the ginger, and stir-fry the shrimp over medium heat for 1-2 minutes until they just turn pink; remove.
  4. Pour the brewed tea and the wine into the wok, add the remaining salt, and bring to a brief simmer.
  5. Return the shrimp to the wok, along with a few of the steeped tea leaves if you have them, and toss for 30-60 seconds until well coated and just cooked through.
  6. Serve immediately while delicate and fragrant.
