  • Makes: 1 serving (515 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free
  • Contains: celery, peanut, poultry, shellfish, soy

Ingredients

  • 90 g Rice noodles, dry
  • 50 g Snails, raw
  • 40 g Bamboo shoots, canned
  • 30 g Tofu, fried
  • 10 g Peanuts, roasted
  • 15 g Green beans, raw
  • 5 g Chilies, dried red
  • 8 g Garlic, raw
  • 1 g Anise seed
  • 1 g Black pepper
  • 250 g Chicken broth
  • 5 g Cilantro, fresh
  • 10 g Vegetable oil

Method

  1. Rinse the snails well; they add a distinctive savoury depth to the broth, alongside the bamboo shoots and spices.
  2. Heat the oil in a pot, fry the garlic, star anise, black pepper and dried chilies for 1-2 minutes until fragrant.
  3. Add the snails and bamboo shoots, which stand in for the fermented sour bamboo traditionally used, and stir-fry for 2 minutes.
  4. Pour in the chicken broth, bring to a simmer, and cook for 20-25 minutes to let the broth take on a deep, savoury flavour.
  5. Meanwhile, boil the rice noodles until tender, then drain and divide into bowls.
  6. Ladle the hot broth over the noodles, top with the fried tofu, peanuts, green beans and cilantro, and serve hot.
