  • Preparation: 60 min
  • Cooking: 55 min
  • Makes: 1 serving (101 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Dairy-free
  • Contains: egg, gluten, peanut

Ingredients

  • 35 g Lotus seeds, dried
  • 15 g Sugar
  • 8 g Peanut oil
  • 15 g Duck eggs, raw
  • 20 g Flour, all-purpose
  • 8 g Cane syrup

Method

  1. Soak the dried lotus seeds in water for at least 1 hour, then simmer in fresh water for 30-40 minutes until very soft; drain and blend or mash into a smooth paste.
  2. Cook the lotus paste in a pan with the sugar and half the oil over low heat, stirring constantly, for 10-15 minutes until it thickens into a firm, non-sticky paste that holds its shape; cool completely.
  3. Steam or bake the duck egg briefly until just set, to use as the salted-yolk centre, then wrap it inside the cooled lotus paste.
  4. Mix the flour with the syrup and remaining oil into a smooth dough, then wrap it around the lotus paste and egg ball, covering completely.
  5. Press the wrapped ball firmly into a mooncake mould to imprint the pattern, then unmould onto a lined tray.
  6. Bake at 180°C (350°F) for 10 minutes, brush lightly with a little beaten egg if you have some spare, then bake for a further 10-15 minutes until golden. Cool completely before serving; this is 1 mooncake (1 portion), so multiply the ingredients by 8-10 for a full batch.
