  • Preparation: 15 min
  • Cooking: 30 min
  • Makes: 1 serving (103 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 45 g Rice flour, glutinous
  • 20 g Sugar, brown
  • 35 g Water
  • 3 g Vegetable oil

Method

  1. Dissolve the brown sugar in the water over low heat, then let cool slightly.
  2. Whisk the sweetened water into the glutinous rice flour until you have a smooth, lump-free batter.
  3. Lightly oil a small heatproof dish and pour in the batter.
  4. Steam over boiling water for 30-40 minutes until the cake turns glossy, translucent and firm to the touch.
  5. Cool completely, ideally overnight, before slicing, as it firms up further as it cools. This is 1 slice (1 portion); multiply the ingredients by 8 for a whole cake.
