Pork Knuckles and Ginger Stew
One serving has 573 kcal and 44 g protein, and at least a fifth of a woman's daily need of selenium (110%), choline (97%), riboflavin (85%), phosphorus (76%), pyridoxine (75%) and cobalamin (71%). Ready in 105 minutes.

- Preparation: 15 min
- Cooking: 90 min
- Makes: 1 serving (565 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, High protein
- Contains: egg, pork, sulphite
Ingredients
- 150 g Pork hock, raw
- 60 g Ginger, fresh
- 40 g Vinegar, balsamic
- 100 g Eggs, whole, raw
- 15 g Sugar, brown
- 200 g Water
Method
- Hard-boil the eggs, cool, and peel them whole.
- Peel the ginger and smash or slice it thickly, then dry-fry in a pot over medium heat for 2-3 minutes until fragrant and slightly dried out; this mellows its sharpness the traditional way.
- Add the pork hock pieces to the pot and cook for 3-4 minutes, turning, until lightly browned.
- Pour in the vinegar, brown sugar and water, bring to a boil, then cover and simmer over low heat for about 1.5 hours until the pork is very tender.
- Add the peeled boiled eggs for the last 20 minutes of cooking so they soak up the sweet-sour, gingery braising liquid.
- Serve hot, with plenty of the ginger and braising liquid spooned over.
