- Preparation: 15 min
- Cooking: 20 min
- Makes: 1 serving (227 g)
- Difficulty: Easy
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 45 g Rice flour
- 12 g Cornstarch
- 25 g Sugar, brown
- 125 g Water
- 20 g Red bean paste, sweetened
Method
- Whisk the rice flour and cornstarch with half the water until completely smooth, with no lumps.
- In a small pot, dissolve the brown sugar in the remaining water and bring to a gentle boil.
- Pour the hot syrup into the flour slurry in a thin stream, whisking constantly, to make a smooth, pourable batter.
- Divide the batter between 2 small oiled heatproof cups and spoon the sweetened red beans over the top of each.
- Steam over boiling water for 18-20 minutes, until the cakes turn glossy, translucent at the edges and set in the centre.
- Cool to room temperature before unmoulding; the cakes firm up and turn pleasantly springy as they cool.
