One serving has 366 kcal and 6 g protein, and at least a fifth of a woman's daily need of vitamin K (140%), manganese (62%), pyridoxine (26%), copper (23%) and folate (22%). Ready in 40 minutes.

- Preparation: 25 min
- Cooking: 15 min
- Makes: 1 serving (146 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 60 g Rice flour, glutinous
- 25 g Spinach, raw
- 15 g Water
- 8 g Sugar
- 35 g Red bean paste, sweetened
- 3 g Vegetable oil
Method
- Blanch the spinach in boiling water for 1 minute, then blend it with the water to a smooth green purée; this stands in for the mugwort juice traditionally used in China.
- Mix the glutinous rice flour and sugar with the green purée to form a smooth, soft dough that isn't sticky; knead briefly and rest 10 minutes.
- Divide the dough into 2 pieces and flatten each into a disc in your palm.
- Place the sweetened red bean paste in the centre of each disc, then gather the edges up and pinch to seal into a smooth ball.
- Brush each ball lightly with the oil, then steam over boiling water for 12-15 minutes until translucent.
- Cool for a few minutes before serving; the balls should be soft, slightly chewy and jade green.
