Ingredients

  • 40 g Adzuki beans, dried
  • 20 g Sugar
  • 320 g Water
  • 1 g Lemon zest

Method

  1. Rinse the dried adzuki beans well and pick out any grit.
  2. Combine the beans, water and citrus zest in a pot and bring to a boil.
  3. Lower the heat, cover, and simmer gently for about 70-75 minutes, topping up water if it runs low, until the beans are completely soft and starting to break down.
  4. Stir in the sugar and simmer for a further 5 minutes until dissolved.
  5. Mash a few of the beans against the side of the pot to lightly thicken the soup, if you like.
  6. Serve warm in small bowls, as a sweet dessert soup.
