  • Preparation: 15 min
  • Cooking: 90 min
  • Makes: 1 serving (340 g)
  • Difficulty: Medium
  • Diets: Dairy-free, Low carb
  • Contains: alcohol, gluten, pork, soy, sulphite

Ingredients

  • 130 g Pork belly, raw
  • 10 g Sugar
  • 10 g Soy sauce
  • 15 g Wine, fortified, dry
  • 8 g Ginger, fresh
  • 10 g Scallions, raw
  • 1 g Anise seed
  • 0.5 g Cinnamon
  • 5 g Vegetable oil
  • 150 g Water

Method

  1. Cut the pork belly into 3 cm cubes and simmer it in a pot of plain water for 3 minutes to remove scum, then drain and rinse the pieces.
  2. Heat the oil in a heavy pot over medium-low heat, add the sugar, and stir slowly until it melts and turns a deep amber color - watch closely so it does not burn.
  3. Add the pork pieces and stir quickly to coat them in the caramel, then add the ginger, scallions, star anise and cinnamon and stir for a minute more.
  4. Pour in the wine, soy sauce and water so the pork is mostly covered, bring to a boil, then cover and simmer gently over low heat for about 1 hour 15 minutes, stirring occasionally.
  5. Uncover for the last 15 minutes and let the sauce reduce over medium heat, turning the pork now and then, until it is thick, glossy and clings to the meat.
  6. Check a piece is fork-tender with no pink remaining before serving the pork with its sauce spooned over.
