Sachima (Honey Noodle Candy)
One serving has 425 kcal and 7 g protein, and at least a fifth of a woman's daily need of selenium (35%), thiamin (31%), vitamin K (31%), riboflavin (25%), copper (22%) and folate (21%). Ready in 35 minutes.

- Preparation: 25 min
- Cooking: 10 min
- Makes: 1 serving (103 g)
- Difficulty: Medium
- Diets: Vegetarian, Dairy-free
- Contains: egg, gluten, honey, sesame
Ingredients
- 40 g Flour, all-purpose
- 15 g Eggs, whole, raw
- 15 g Vegetable oil
- 20 g Sugar
- 10 g Honey
- 3 g Sesame seeds
Method
- Whisk the egg and mix it into the flour to form a stiff, dry dough; knead until smooth, cover and rest 20 minutes.
- Roll the dough out very thin and cut it into fine noodle-like strips, dusting with a little extra flour so they don't stick together.
- Heat the oil in a wok to about 170°C (340°F) and fry the strips in batches for 1-2 minutes until pale golden and crisp; drain well.
- Melt the sugar and honey together in a clean, dry pan over low heat until it forms a thin, sticky syrup, about 3 minutes; don't let it darken.
- Off the heat, quickly toss the fried noodles and sesame seeds through the hot syrup until every strand is coated.
- While still warm, press the mixture firmly and evenly into a small lined tin, then cool completely before cutting into a block.
