  • Preparation: 45 min
  • Cooking: 15 min
  • Makes: 1 serving (240 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: beef, gelatin, gluten, pork, sesame, soy

Ingredients

  • 60 g Flour, all-purpose
  • 50 g Water
  • 1 g Yeast, active dry
  • 2 g Sugar
  • 90 g Pork, ground, raw
  • 12 g Scallions, raw
  • 3 g Ginger, fresh
  • 5 g Soy sauce
  • 3 g Sesame oil
  • 1 g Salt
  • 3 g Gelatin
  • 8 g Vegetable oil
  • 2 g Sesame seeds

Method

  1. Warm a little of the water, dissolve the yeast and sugar in it, then knead into the flour with the rest of the water to a smooth dough; cover and let rise about 30 minutes until puffy.
  2. Meanwhile mix the pork with most of the scallions, the ginger, soy sauce, sesame oil, salt and the gelatin; chill so the gelatin firms into a soft aspic within the filling.
  3. Divide the dough into 4 pieces, flatten each into a small disc, and spoon a portion of the pork filling into the centre; gather the edges up and twist to seal into a bun.
  4. Heat the vegetable oil in a non-stick pan over medium heat, arrange the buns flat-side down, and fry for 2-3 minutes until the bottoms turn golden.
  5. Pour in enough water to come a third of the way up the buns, cover, and steam-fry for 8-10 minutes until the water evaporates and the pork is cooked through (74°C/165°F).
  6. Uncover, sprinkle with the sesame seeds and remaining scallion, and fry uncovered for 1 more minute to re-crisp the bottoms before serving.
