Ingredients

  • 150 g Beef sirloin steak, raw
  • 100 g Napa cabbage, raw
  • 15 g Egg whites, raw
  • 8 g Cornstarch
  • 8 g Garlic, raw
  • 3 g Ginger, fresh
  • 8 g Scallions, raw
  • 4 g Chilies, dried red
  • 1 g Black pepper
  • 10 g Black bean sauce
  • 5 g Soy sauce
  • 20 g Vegetable oil
  • 0.5 g Salt
  • 8 g Wine, fortified, dry

Method

  1. Slice the beef thinly against the grain and toss it with the egg white, half the cornstarch, the wine and a pinch of the salt; leave to velvet for 15 minutes.
  2. Tear or slice the napa cabbage and blanch briefly in boiling water until just wilted, then spread it in the bottom of a deep serving bowl.
  3. Heat half the oil in a wok, fry the black bean sauce, garlic, ginger and half the dried chillies until fragrant, then add the soy sauce and the water and bring to a simmer.
  4. Mix the remaining cornstarch with a splash of water, stir it into the broth to thicken lightly, then slide in the beef slices and cook just until they turn pale, 1-2 minutes; pour everything over the cabbage.
  5. Scatter the remaining dried chillies and the black pepper, then the scallion, over the top.
  6. Heat the remaining oil in a small pan until lightly smoking, then pour it sizzling over the chillies and scallion just before serving to release their aroma.
