  • Preparation: 30 min
  • Cooking: 15 min
  • Makes: 1 serving (206 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: alcohol, egg, gluten, pork, sesame, shellfish, soy, sulphite

Ingredients

  • 90 g Pork, ground, raw
  • 40 g Shrimp, raw
  • 4 g Mushrooms, shiitake, dried
  • 35 g Wonton wrappers
  • 10 g Scallions, raw
  • 4 g Ginger, fresh
  • 6 g Soy sauce
  • 3 g Sesame oil
  • 5 g Wine, fortified, dry
  • 4 g Cornstarch
  • 5 g Peas, green, raw

Method

  1. Soak the dried shiitake mushrooms in hot water for 20 minutes until soft, then drain, squeeze dry and chop finely.
  2. Peel and roughly chop the shrimp so some texture remains, and mix it with the ground pork, mushrooms, scallions, ginger, soy sauce, sesame oil, wine and cornstarch until sticky.
  3. Lay a wrapper in your palm, place a heaped spoonful of filling in the center, and gently gather the sides up around the filling, pleating loosely so the top stays open and the base sits flat.
  4. Tap each dumpling on the counter to flatten its base and press a single green pea onto the exposed filling on top.
  5. Line a steamer basket with parchment paper or cabbage leaves, arrange the dumplings with space between them, and steam over boiling water for 10-12 minutes until the pork is opaque and the shrimp is pink and firm.
  6. Serve hot, straight from the steamer, with a small dish of soy sauce or vinegar for dipping.
