  • Cooking: 25 min
  • Makes: 1 serving (243 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten, mustard, soy

Ingredients

  • 70 g Rice, glutinous
  • 90 g Water
  • 20 g Carrots, raw
  • 20 g Cucumber, raw
  • 15 g Mustard greens, pickled
  • 10 g Soybeans, dried
  • 5 g Cilantro, fresh
  • 8 g Vegetable oil
  • 1 g Cayenne pepper
  • 0.5 g Salt
  • 3 g Soy sauce

Method

  1. Rinse the glutinous rice, then simmer or steam it in the water until fully tender and sticky, about 20 minutes.
  2. While still hot, pound or mash the rice firmly with a pestle or the back of a spoon until it turns into a smooth, stretchy paste, then press it out on an oiled surface into a thin, even round sheet; let cool slightly.
  3. Shallow-fry the dried soybeans in the oil until golden and crunchy, then drain; stir the cayenne pepper into a spoonful of the hot oil to make a simple chili oil.
  4. Julienne the carrot and cucumber and lay them across the rice sheet with the pickled mustard greens, cilantro and crispy soybeans.
  5. Drizzle over the soy sauce, chili oil and the salt, then roll the rice sheet up firmly around the filling, in the shape of a swaddled baby if you like.
  6. Slice in half to serve, so the colourful vegetable filling shows at the cut ends.
