Snow Skin Mooncake
One serving has 295 kcal and 4 g protein, and at least a fifth of a woman's daily need of manganese (32%). Ready in 85 minutes.

- Preparation: 80 min
- Cooking: 5 min
- Makes: 1 serving (100 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 25 g Rice flour, glutinous
- 10 g Rice flour
- 10 g Sugar, powdered
- 20 g Milk, whole
- 5 g Vegetable oil
- 30 g Red bean paste, sweetened
Method
- Toast the glutinous rice flour in a dry pan over low heat for a few minutes, stirring, until it smells nutty and turns very slightly golden; this keeps the finished skin from tasting raw.
- Whisk the toasted flour with the rice flour, powdered sugar, milk and oil to a smooth, soft dough; dust your hands with a little extra toasted flour if it's sticky.
- Divide the dough and the red bean paste into equal small portions.
- Flatten a piece of dough in your palm, place a ball of red bean paste in the centre, and wrap the dough around it, pinching to seal completely.
- Dust a mooncake mould with a little rice flour, press the filled ball into it to stamp a pattern, then unmould.
- Chill for at least 1 hour before serving, so the snow skin firms up and turns pleasantly chewy.
