  • Preparation: 25 min
  • Cooking: 10 min
  • Makes: 1 serving (269 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: egg, gluten, pork, sesame, soy

Ingredients

  • 80 g Cabbage, green, raw
  • 30 g Carrots, raw
  • 20 g Mushrooms, shiitake, raw
  • 30 g Pork, ground, raw
  • 10 g Glass noodles, dry
  • 4 g Garlic, raw
  • 8 g Scallions, raw
  • 6 g Soy sauce
  • 3 g Sesame oil
  • 45 g Wonton wrappers
  • 18 g Vegetable oil
  • 15 g Plum sauce

Method

  1. Soak the glass noodles in warm water for 10 minutes until soft, then drain and cut into short lengths with scissors.
  2. Stir-fry the pork in a splash of the vegetable oil over medium-high heat until it is no longer pink, then add the garlic, cabbage, carrots and mushrooms and cook for 3-4 minutes until just softened.
  3. Stir in the noodles, soy sauce, sesame oil and scallions, then spread the filling on a tray and let it cool completely so the wrappers do not turn soggy.
  4. Lay a wrapper in a diamond in front of you, place a spoonful of filling near the bottom corner, fold that corner over the filling, fold in the sides, and roll up tightly, sealing the last corner with a dab of water.
  5. Heat the remaining oil in a wok or deep pan to 175 °C (350 °F) and fry the rolls in batches for 3-4 minutes, turning now and then, until deep golden and crisp all over.
  6. Drain on paper towels for a minute before serving hot with the plum sauce for dipping.
