  • Preparation: 10 min
  • Cooking: 35 min
  • Makes: 1 serving (451 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 25 g Prunes
  • 5 g Tamarind pulp
  • 20 g Sugar
  • 1 g Lemon zest
  • 400 g Water

Method

  1. Rinse the dried plums, then combine them with the tamarind pulp, citrus zest and water in a pot; the plums stand in for the smoked wumei and the zest for dried tangerine peel used in China.
  2. Bring to a boil, then lower the heat and simmer gently for 30 minutes to draw out the sour, smoky flavour.
  3. Stir in the sugar until dissolved, then simmer for 5 more minutes.
  4. Strain out and discard the solids, pressing them to extract all the liquid.
  5. Chill the drink thoroughly, or serve it over ice.
  6. Stir well before pouring, as a little sediment may settle at the bottom.
