  • Makes: 1 serving (436 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: egg, gluten, pork

Ingredients

  • 160 g Pork loin, raw
  • 20 g Flour, all-purpose
  • 15 g Cornstarch
  • 25 g Eggs, whole, raw
  • 0.5 g Salt
  • 50 g Pineapple, canned
  • 40 g Bell pepper, red, raw
  • 30 g Bell pepper, green, raw
  • 30 g Onions, raw
  • 20 g Ketchup
  • 10 g Vinegar, white
  • 10 g Sugar
  • 25 g Vegetable oil

Method

  1. Cut the pork into bite-sized chunks and season lightly with the salt.
  2. Whisk the flour, half the cornstarch and the egg into a thick batter, dip the pork pieces in it, and let any excess drip off.
  3. Heat the oil in a wok to about 175 °C (350 °F) and fry the pork in batches for 4-5 minutes, until golden and cooked through with clear juices, then drain on paper towels.
  4. Pour off all but a tablespoon of the oil, then stir-fry the onion and both bell peppers over high heat for 2 minutes until just crisp-tender.
  5. Stir in the ketchup, vinegar and sugar with a splash of water, bring to a simmer, and mix the remaining cornstarch with a little water to stir in and thicken the sauce.
  6. Add the pineapple and the fried pork, toss quickly to coat everything in the glossy sauce, and serve immediately so the pork stays crisp.
