  • Cooking: 53 min
  • Makes: 1 serving (285 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Dairy-free, Low carb
  • Contains: egg, gluten, soy

Ingredients

  • 120 g Eggs, whole, raw
  • 150 g Black tea, brewed
  • 10 g Soy sauce
  • 1 g Anise seed
  • 0.5 g Cinnamon
  • 0.75 g Salt
  • 3 g Sugar

Method

  1. Rinse the eggs, place them in a pot of cold water, bring to a boil, then simmer for 8 minutes for a just-set yolk; drain and cool under cold running water.
  2. Gently tap and crack the shells all over with the back of a spoon, without peeling, so the marinade can seep in through a web of fine cracks.
  3. Combine the tea, soy sauce, star anise (using anise seed here), cinnamon, sugar and salt in a pot and bring to a boil.
  4. Add the cracked eggs, return to a simmer, then cover and cook gently for 45 minutes so the tea and spices penetrate.
  5. Turn off the heat and let the eggs steep in the liquid for at least 4 hours, or overnight in the refrigerator, for the deepest marbled colour and flavour.
  6. Peel just before serving to reveal the marbled pattern; serve at room temperature or chilled as a snack.
