  • Makes: 1 serving (350 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free
  • Contains: beef, pork, shellfish

Ingredients

  • 200 g Daikon radish, raw
  • 60 g Rice flour
  • 15 g Shrimp, raw
  • 12 g Salami
  • 4 g Mushrooms, shiitake, dried
  • 8 g Scallions, raw
  • 10 g Vegetable oil
  • 1 g Salt
  • 0.3 g White pepper
  • 40 g Water

Method

  1. Peel and coarsely grate the daikon radish (used for this cake despite its English name); simmer it with the water for 8-10 minutes until softened, keeping the liquid.
  2. Rehydrate the dried shiitake, then finely dice it with the salami, standing in for Chinese sausage; fry both in half the oil until fragrant.
  3. Whisk the rice flour into the reserved daikon liquid to make a smooth batter, then stir in the cooked daikon, salami, shiitake, chopped dried shrimp, salt and white pepper.
  4. Pour the thick batter into an oiled dish, smooth the top, and steam for 45-50 minutes until firm and set all the way through.
  5. Cool completely, ideally for a couple of hours, before turning out and slicing into thick pieces.
  6. Pan-fry the slices in the remaining oil until golden and crisp on both sides, then scatter with the scallion and serve.
