  • Preparation: 10 min
  • Cooking: 30 min
  • Makes: 1 serving (225 g)
  • Difficulty: Medium
  • Diets: Dairy-free, Low carb
  • Contains: gluten, pork, soy

Ingredients

  • 120 g Pork belly, raw
  • 12 g Black bean sauce
  • 6 g Hoisin sauce
  • 60 g Leeks, raw
  • 5 g Garlic, raw
  • 4 g Ginger, fresh
  • 5 g Soy sauce
  • 3 g Sugar
  • 10 g Vegetable oil

Method

  1. Simmer the whole piece of pork belly in a pot of water with the ginger for 20 minutes, until just cooked through, then lift it out and let it cool enough to handle.
  2. While the pork cools, slice the leeks on a sharp diagonal and mince the garlic.
  3. Slice the cooled pork belly as thinly as you can.
  4. Heat the oil in a wok over medium-high heat and stir-fry the pork slices for 2-3 minutes, until the edges curl and turn lightly crisp and some fat renders out.
  5. Push the pork to one side, add the garlic, doubanjiang-style bean sauce and hoisin sauce to the cleared space, and stir for 30 seconds until fragrant, then mix everything together.
  6. Add the leeks, soy sauce and sugar, and toss over high heat for 1-2 minutes until the leeks are just wilted but still bright, then serve at once.
