Ingredients

  • 90 g Split peas, dried
  • 25 g Sugar
  • 250 g Water
  • 8 g Jujubes, dried

Method

  1. Rinse the split peas, then simmer them in the water for about 45-50 minutes until completely soft and starting to fall apart, topping up water if needed.
  2. Drain any excess liquid, then blend or push the peas through a sieve while hot to make a very smooth, thick purée.
  3. Return the purée to the pan with the sugar and cook over low heat, stirring constantly, for 5-8 minutes until it thickens into a stiff paste that holds its shape.
  4. Chop the jujubes and fold most of the pieces through the paste.
  5. Press the warm paste firmly and evenly into a small lined tin, pressing the remaining jujube pieces into the top.
  6. Chill for at least 2 hours until firm, then turn out and cut into small blocks to serve.
