  • Preparation: 80 min
  • Cooking: 10 min
  • Makes: 1 serving (282 g)
  • Difficulty: Hard
  • Diets: Dairy-free
  • Contains: alcohol, beef, celery, gelatin, gluten, pork, poultry, sesame, soy, sulphite

Ingredients

  • 55 g Flour, all-purpose
  • 25 g Water
  • 90 g Pork, ground, raw
  • 6 g Gelatin
  • 80 g Chicken broth
  • 3 g Ginger, fresh
  • 8 g Scallions, raw
  • 6 g Soy sauce
  • 2 g Sesame oil
  • 5 g Wine, fortified, dry
  • 2 g Sugar

Method

  1. Make the aspic first: warm the chicken broth, dissolve the gelatin into it fully, then chill until firmly set, at least 1 hour; once set, chop it into small cubes.
  2. Knead the flour with the water into a smooth, firm dough; cover and rest 20 minutes, then roll into a log and cut into small pieces.
  3. Mix the ground pork with the ginger, scallion, soy sauce, sesame oil, wine and sugar, then fold the chilled aspic cubes through the filling.
  4. Roll each piece of dough into a thin round, thinner at the edges than the centre, and place a spoonful of the pork-and-aspic filling in the middle.
  5. Gather the edges up around the filling in fine pleats and twist to seal into a small, tight purse; place on a lined steamer.
  6. Steam over vigorously boiling water for 8-10 minutes until the wrappers turn translucent and the pork is cooked through (74°C/165°F); serve immediately, warning that the soup inside is very hot.
