  • Preparation: 20 min
  • Cooking: 10 min
  • Makes: 1 serving (170 g)
  • Difficulty: Medium
  • Diets: Vegan, Gluten-free, Dairy-free
  • Contains: peanut, sesame

Ingredients

  • 55 g Rice flour, glutinous
  • 20 g Sugar
  • 30 g Water
  • 20 g Vegetable oil
  • 20 g Coconut, desiccated
  • 20 g Peanuts, roasted
  • 5 g Sesame seeds

Method

  1. Knead the glutinous rice flour with half the sugar, the water and 1 tablespoon of the oil into a smooth, pliable dough; cover and rest 15 minutes.
  2. Mix the desiccated coconut, crushed roasted peanuts, sesame seeds and remaining sugar together for the filling.
  3. Divide the dough into small pieces and flatten each into a thin disc.
  4. Place a spoonful of the peanut-coconut filling on one half of each disc, fold over into a half-moon, and crimp the edge firmly, pinching a decorative rope pattern if you like.
  5. Heat the remaining oil in a wok to about 160°C (320°F) and fry the dumplings over medium-low heat, turning often, for 6-8 minutes until deep golden and cooked through; the low temperature keeps the skin from splitting.
  6. Drain well on paper towels and cool slightly before serving, as the filling stays hot.
