  • Preparation: 65 min
  • Cooking: 10 min
  • Makes: 1 serving (170 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten

Ingredients

  • 90 g Flour, all-purpose
  • 3 g Baking powder
  • 1 g Baking soda
  • 1 g Salt
  • 55 g Water
  • 20 g Vegetable oil

Method

  1. Whisk the flour, baking powder, baking soda and salt together, then stir in the water to form a shaggy, sticky dough - it should be much softer than bread dough.
  2. Knead briefly in the bowl just until it comes together, cover, and let it rest at room temperature for 1 hour so the dough relaxes and puffs.
  3. This amount makes one serving of two sticks; the dough is easiest to mix in a bigger batch, so double or triple the recipe if you are frying for more people.
  4. Heat the oil in a narrow, deep pot to 190 °C (375 °F).
  5. On an oiled surface, stretch the dough into a rectangle about 1 cm thick, cut it into two long strips, stack one on top of the other, and press a chopstick down the middle to join them.
  6. Pick up the joined strip by both ends, stretch it gently to about twice its length, and lower it into the hot oil, turning frequently for 2-3 minutes until deep golden and puffed all through.
  7. Drain on a rack for a minute before eating; youtiao is best hot and crisp, dipped in warm soy milk or congee.
