  • Preparation: 290 min
  • Cooking: 165 min
  • Makes: 1 serving (215 g)
  • Difficulty: Hard
  • Diets: Dairy-free
  • Contains: alcohol, egg, gluten, peanut, pork, soy, sulphite

Ingredients

  • 100 g Rice, glutinous
  • 60 g Pork belly, raw
  • 5 g Mushrooms, shiitake, dried
  • 15 g Peanuts, raw
  • 15 g Egg yolks, raw
  • 8 g Soy sauce
  • 0.5 g Anise seed
  • 1 g Salt
  • 5 g Vegetable oil
  • 5 g Wine, fortified, dry

Method

  1. Soak the glutinous rice in water for at least 4 hours, or overnight, then drain well; separately soak the peanuts for the same time.
  2. Marinate the pork belly, cut into chunks, with the soy sauce, wine, five-spice (using anise seed here) and salt for at least 30 minutes; rehydrate the dried shiitake in warm water.
  3. Stir-fry the drained rice briefly in the oil so the grains are lightly coated, then mix in the drained peanuts.
  4. Lay two dried bamboo leaves overlapping into a cone, spoon in a layer of the rice, then add a piece of the marinated pork, a shiitake mushroom and a piece of the egg yolk (standing in for salted duck egg yolk), and cover with more rice, pressing to fill any gaps.
  5. Fold the leaves over to fully enclose the filling into a tight pyramid and tie firmly with kitchen string.
  6. Boil the wrapped dumplings in a large pot of water for 2.5-3 hours, topping up water as needed, until the rice is completely tender; drain and cool slightly before unwrapping to eat.
