Ingredients

  • 180 g Spanish mackerel, raw
  • 15 g Tamarind pulp
  • 15 g Chili peppers, red, raw
  • 25 g Shallots, raw
  • 8 g Garlic, raw
  • 5 g Ginger, fresh
  • 2 g Turmeric
  • 8 g Lemongrass, raw
  • 40 g Tomatoes, raw
  • 10 g Vegetable oil
  • 200 g Water
  • 1 g Salt

Method

  1. Blend or pound the shallots, garlic, chili, ginger, turmeric and lemongrass into a smooth spice paste.
  2. Heat the oil in a pot and fry the spice paste over medium heat for 3-5 minutes until fragrant and the oil separates slightly.
  3. Add the water and tamarind pulp, bring to a boil, and simmer for 10 minutes so the sour flavour infuses the broth; strain out any tamarind fibres if needed.
  4. Add the tomato and salt and simmer for 5 more minutes.
  5. Slide in the fish and simmer gently for 8-10 minutes until just cooked through, without stirring too roughly so the pieces stay whole.
  6. Serve hot with steamed rice.
