  • Preparation: 15 min
  • Cooking: 35 min
  • Makes: 1 serving (272 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: gluten, nut, poultry, soy

Ingredients

  • 190 g Chicken thighs, skin-on, raw
  • 15 g Hoisin sauce
  • 20 g Shallots, raw
  • 8 g Garlic, raw
  • 1 g Turmeric
  • 5 g Tamarind pulp
  • 8 g Lemongrass, raw
  • 1 g Lemon zest
  • 5 g Macadamia nuts
  • 10 g Chili peppers, red, raw
  • 0.5 g Salt
  • 8 g Vegetable oil

Method

  1. Blend the shallots, garlic, candlenut, turmeric, chili and a splash of water into a smooth paste.
  2. Warm the oil in a pan, fry the paste for 3-4 minutes until fragrant, then add the lemongrass, lime leaf stand-in, tamarind and salt.
  3. Add the chicken and enough water to half-cover it, bring to a simmer, cover, and cook over low heat for 15 minutes, turning once.
  4. Uncover and simmer for 5 more minutes so the sauce reduces and clings to the chicken; stir in the sweet soy stand-in sauce for the last minute.
  5. Lift the chicken out and grill it over medium-high heat (or under a hot broiler) for 8-10 minutes, turning and basting with the leftover sauce, until charred in spots.
  6. Check the chicken reaches 74 °C (165 °F) with clear juices and no pink before serving.
