  • Makes: 1 serving (559 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free
  • Contains: beef, celery, egg

Ingredients

  • 120 g Beef, ground, 85% lean, raw
  • 15 g Cornstarch
  • 5 g Garlic, raw
  • 15 g Egg whites, raw
  • 0.5 g Salt
  • 200 g Beef broth
  • 150 g Water
  • 30 g Rice noodles, dry
  • 5 g Scallions, raw
  • 8 g Shallots, raw
  • 10 g Celery, raw

Method

  1. Mix the ground beef with the cornstarch, garlic, egg white and salt into a smooth, slightly sticky paste (a quick blend helps the bouncy texture).
  2. Shape the mixture into small meatballs and drop them into a pot of gently simmering water; poach for 8-10 minutes until they float and are cooked through, then lift out.
  3. Soak the rice noodles in warm water until pliable, then drain.
  4. Bring the beef broth and water to a simmer in a separate pot; fry the shallots until golden and crisp.
  5. Divide the noodles and cooked meatballs between bowls, then ladle over the hot broth.
  6. Top with the sliced celery, scallion and crispy fried shallots before serving.
