Ingredients

  • 130 g Beef chuck, raw
  • 50 g Beef tripe, raw
  • 8 g Garlic, raw
  • 15 g Shallots, raw
  • 2 g Coriander seeds
  • 1 g Cumin
  • 5 g Ginger, fresh
  • 8 g Lemongrass, raw
  • 20 g Peanuts, raw
  • 5 g Rice flour
  • 8 g Vegetable oil
  • 400 g Water
  • 1.3 g Salt

Method

  1. Place the beef chuck and tripe in a large pot, cover with the water, bring to a boil, and skim off any scum.
  2. Pound or blend the garlic, shallots, coriander, cumin, ginger and lemongrass into a paste; fry it in the oil for 2-3 minutes until fragrant, then add it to the pot.
  3. Lower the heat and simmer, covered, for 1.5-2 hours until the beef and tripe are completely tender.
  4. Toast the rice flour in a dry pan until pale golden and fragrant, then whisk it with the ground peanuts and a ladleful of the hot broth until smooth.
  5. Stir this mixture back into the pot to lightly thicken the broth, and season with the salt.
  6. Simmer for a further 10 minutes, then serve hot, traditionally with pressed rice cakes or steamed rice.
