  • Makes: 1 serving (176 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Dairy-free
  • Contains: alcohol, egg, gluten

Ingredients

  • 40 g Flour, all-purpose
  • 25 g Eggs, whole, raw
  • 40 g Coconut milk, canned
  • 1 g Vanilla extract
  • 40 g Coconut, fresh
  • 20 g Sugar, brown
  • 10 g Water

Method

  1. Whisk the flour, egg, coconut milk and vanilla extract, standing in for pandan flavouring and colour, into a smooth, thin batter.
  2. Heat a lightly oiled non-stick pan over medium heat and pour in a thin layer of batter, swirling to coat the base; cook for 1-2 minutes until set, without browning, then flip briefly and remove.
  3. Repeat with the remaining batter to make 2-3 thin crepes.
  4. Combine the grated fresh coconut with the brown sugar and water in a small pan and cook over low heat for 3-4 minutes until the sugar coats the coconut and it turns slightly sticky.
  5. Spoon the sweet coconut filling along one edge of each crepe.
  6. Fold in the sides and roll up into a neat log; serve warm or at room temperature.
