- Preparation: 15 min
- Cooking: 120 min
- Makes: 1 serving (647 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free
- Contains: egg, poultry
Ingredients
- 200 g Jackfruit, raw
- 100 g Coconut milk, canned
- 25 g Sugar, brown
- 15 g Shallots, raw
- 8 g Garlic, raw
- 1 g Bay leaves
- 8 g Ginger, fresh
- 80 g Chicken thighs, skin-on, raw
- 50 g Eggs, whole, raw
- 8 g Vegetable oil
- 150 g Water
- 1.5 g Salt
Method
- Cut the jackfruit into chunks. Combine it with the coconut milk, brown sugar, shallots, garlic, bay leaf and ginger, standing in for galangal, in a heavy pot.
- Add the chicken pieces and the water, then bring to a boil.
- Lower the heat and simmer, uncovered, for 1.5-2 hours, stirring occasionally, until the jackfruit is very tender and the sauce has reduced to a thick, deep brown glaze.
- Season with the salt partway through cooking.
- Hard-boil the egg separately, peel it, and add it whole to the pot for the final 15-20 minutes so it absorbs the sweet, savoury sauce.
- Serve warm with rice, making sure the chicken is fully cooked through (74°C/165°F).
