  • Cooking: 25 min
  • Makes: 1 serving (198 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free
  • Contains: alcohol, dairy, egg

Ingredients

  • 50 g Coconut, fresh
  • 80 g Milk, whole
  • 8 g Butter, unsalted
  • 15 g Sugar
  • 20 g Egg yolks, raw
  • 6 g Cornstarch
  • 8 g Raisins
  • 0.3 g Cinnamon
  • 3 g Spirits
  • 8 g Cheddar cheese

Method

  1. This makes 1 portion in a small ramekin; multiply by 6 to fill a baking dish for a whole klappertaart.
  2. Whisk the egg yolk with the sugar and cornstarch in a bowl until smooth.
  3. Warm the milk in a small pan until just starting to steam, then slowly whisk it into the egg mixture to temper it.
  4. Return everything to the pan and cook over low heat, stirring constantly, for 4-5 minutes until it thickens into a custard that coats the back of a spoon.
  5. Off the heat, stir in the butter, coconut meat, raisins, cinnamon and rum, then pour into a small heatproof ramekin.
  6. Top with the grated cheddar and set the ramekin under a hot broiler for 3-4 minutes, watching closely, until the cheese is melted and lightly browned.
  7. Chill for at least an hour before serving cold.
