Klepon (Sweet Rice Balls)
One serving has 369 kcal and 4 g protein, and at least a fifth of a woman's daily need of manganese (55%) and copper (21%). Ready in 25 minutes.

- Preparation: 15 min
- Cooking: 10 min
- Makes: 1 serving (136 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
- Contains: alcohol
Ingredients
- 50 g Rice flour, glutinous
- 35 g Water
- 1 g Vanilla extract
- 25 g Sugar, brown
- 25 g Coconut, fresh
- 0.3 g Salt
Method
- Knead the glutinous rice flour with the water and vanilla extract, standing in for pandan flavouring, into a smooth, soft dough.
- Divide the dough into small balls and flatten each slightly; place a small piece of the brown sugar, standing in for palm sugar, in the centre of each and seal by rolling back into a ball.
- Bring a pot of water to a boil and drop in the balls; cook until they float to the surface, then simmer for 1 more minute and lift out.
- Meanwhile mix the grated fresh coconut with the salt and steam for 2-3 minutes to make it safe to eat and slightly sticky.
- While the balls are still warm and slightly damp, roll them in the salted grated coconut until fully coated.
- Serve at room temperature; biting into one releases a burst of melted sugar syrup.
