Krupuk (Indonesian Shrimp Crackers)
One serving has 280 kcal and 4 g protein, and at least a fifth of a woman's daily need of vitamin K (25%). Ready in 250 minutes.

- Preparation: 240 min
- Cooking: 10 min
- Makes: 1 serving (109 g)
- Difficulty: Medium
- Diets: Pescatarian, Gluten-free, Dairy-free
- Contains: shellfish
Ingredients
- 40 g Tapioca pearls, dry
- 20 g Shrimp, raw
- 4 g Garlic, raw
- 0.8 g Salt
- 2 g Sugar
- 30 g Water
- 12 g Vegetable oil
Method
- This makes a small batch (about 10 crackers, one serving); multiply the tapioca, shrimp, garlic, salt, sugar and water for more.
- Grind or very finely mince the raw shrimp (used here in place of the dried shrimp real krupuk is made with) with the garlic until it is almost a paste.
- Mix the tapioca starch with the shrimp paste, salt, sugar and water into a smooth, thick dough, then shape it into a narrow log about 3 cm across.
- Steam the log over boiling water for about 30 minutes until firm all the way through, then let it cool completely before refrigerating for at least an hour so it firms up further.
- Slice the log paper-thin and dry the slices on a rack in a very low oven, about 60 °C (140 °F), for 3-4 hours, or in the sun for a day, until they are hard and translucent.
- Heat the oil until shimmering and fry the dried crackers a few at a time for 10-15 seconds each, until they puff up and turn light golden, then drain and cool before eating.
